The Chef
I grew up around food — fishing, farming, foraging on the Australian coast. Professional kitchens pulled me in early. By 23 I was Young Chef of the Year in Australia. By 40 I'd won The World Cook Championship on Amazon Prime.
Between those two titles: 20+ years leading kitchens across Australia, five restaurants opened in Hong Kong in three months, and a move to Lisbon where I built Downunder — a MICHELIN-selected restaurant serving Australian fusion to a city that had never tasted anything like it.
From cooking at Downunder to running private chef events across the Lisbon and Cascais region to sharing what I've learned through recipes, videos, and a cookbook called UNCHOPPED — the food is the constant. Everything else grows from it.
